‘Ain’t Nobody Got Time For That Crispy Coconut Chicken Fingers’ and Your Health
May 31, 2016
Do you feel like you don’t have enough time to make a healthy home cooked meal? (Like me).
Are you always on the go trying to find time to sit down and eat a quick bite of whatever you can get your hands on? (Like me).
Well you are not the only one! This trend has unfortunately become an epidemic in America today. We’ve all adapted to a fast paced lifestyle and are taking less time for ourselves and our personal wellness. Work, kids, spouse, errands, repeat.
We are trained from a young age that it is okay to scarf down a quick meal like fast food or sandwich while driving in our cars. It’s the ‘grab & go’ lifestyle. Sound like you? Read on.
Sadly, the majority of Americans are becoming ill with avoidable conditions and diseases due to a poor diet, increased stress and lack of physical activity. Taking the time to prepare tasty meals in advance with real live nutritious foods while decreasing the amount of ingested fake processed foods will change your body’s physiology for the better! In fact, I gift you with a recipe from our 21-day Anti-Inflammatory Detox, ‘Ain’t Nobody Got Time for That Crispy Coconut Chicken Fingers’. You’re welcome.
1) Preheat oven to 375’F
2) Mix 2 cups dry coconut flakes, 2 tbsp garlic, 1tbsp salt, 1/2 tbsp black pepper in a small bowl.
3) Put 1.5 cups eggs whites in neighboring small bowl.
3) Oil or spray a baking sheet.
4) Dip grass-fed, hormone-free, antibiotic-free, non GMO, honor roll student, free range chicken strips into egg white bowl.
5) Dip drippy fingers into dry mix bowl. Really cover/pack coconut shreds on both sides.
6) Lay coated strips in Tetris-esque maze on baking sheet to get as many on there as possible (you’re busy, after all). Spray both sides with olive oil.
7) Bake at 375′ F for 20-30 min or until outer crispy pieces are a nice, dark brown.
8) Dip in sauces, eat on the run, or wrap in cabbage leaves for fiber-full sandwiches.
